Cilantro Kale Soup

Serves 2 

Gone are the days when hot soups were the only soups. Now you get to choose. In this case, kale is the uber health defense against heart disease, diabetes, cancer, etc. Your body and future health will thank you. It’s the Genechanger way.

1 cup kale, slivered

4 cups organic vegetable broth

½ cup chopped cilantro leaves and tender stems

1 6-ounce can sliced water chestnuts, rinsed and drained

Rinse kale leaves. In a medium saucepan, bring vegetable broth to a boil over medium-high heat. Add kale and cilantro. Cook until kale is wilted but still bright green, about 2 minutes. Add water chestnuts and serve immediately.

Note: If you choose chilled, let soup come to room temperature, then chill for several hours before serving.
